Yummy & Healthy Bread Recipe

One of the most common questions I get is about which bread to buy. The truth is that when it comes to bread, you are often better off just baking your own. It doesn't have to be labor intensive and you will always know exactly what you are eating.

 

Most breads on grocery shelves are loaded with sugars and preservative and what's worse is that even the ‘healthy' breads contain wheat and wheat products. Wheat causes inflammation in our guts and I avoid it altogether. You should too!

This recipe is quick and  there's nothing like the smell of bread in the oven. These are great as buns for your hamburger, or used as a sandwich. I make a sandwich for lunch using these with my Fat Burning  Chicken Salad.

 

This recipe makes about 6 pancake sized bread rounds.

 

Yummy and Healthy Bread

Yield: 6 pancake sized bread rounds

 

INGREDIENTS:

  • 2 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 1 cup Greek yogurt (can substitute unsweetened coconut or almond milk)
  • 1/4 cup unsalted butter or unrefined coconut oil
  • 3 large eggs
  • 2 tablespoons raw honey or 100% maple syrup

 

DIRECTIONS:

1. Preheat oven to 350ºF. Line 2 baking sheets with parchment paper.

2. Blend all of the ingredients in a food processor until smooth. Use a whisk and a small bowl if you prefer.

3. Spoon mixture into rounds, 2 – 3” in diameter on the prepared baking sheet.

4. Spread the mixture thin like you would be making thin pancakes leaving 2” between rounds.

5. Bake 15 – 20 minutes until golden and cooked through.

6. Using a spatula, slide under and remove to a cooling rack.

7. Store in an airtight container in the refrigerator.
